Easy Kettle Corn


OK - so this is not the greatest photo. But let me assure you that what is in this blue bowl is something you will crave after tasting it. I LOVE kettle corn. And this is a really nice (and healthier) option than the carnival crafted stuff. Not to mention, you will avoid all the chemicals associated with the microwave variety.

Kettle Corn
It is easy to double this recipe!

Ingredients:
  • 2 TBSP Coconut Oil
  • 1/4 Cup popcorn
  • 1 TBSP sugar (I like the brown "raw" sugar)
  • salt
Directions:
Over medium heat, in a pot with a well-fitting lid, heat the coconut oil until melted. Add three kernels of popcorn. Once they pop, add the rest of the popcorn and the TBSP of sugar. Cover immediately and continuously shake (over the heat) as the rest of the popcorn pops. Transfer popcorn to a large bowl, add salt, and stir to mix before the popcorn cools (and sticks together). It's that easy!

  3. Well... here is my theory on cooking oils. ;0) I tend to lean towards the oils that I know "where they come from". Olive oil comes from olives... Coconut Oil comes from coconuts... Canola oil comes from... ??? I read somewhere that the word Canola is derived from "Canada" and "oil" since that is where it is manufactured. But I had to look up the fact that it is actually processed from Rapeseed. Rapeseed is often an ingredient found in insect repellent (Lovely!). And there is also the fact that Hexane is used in the processing of the Rapeseed to make the Canola oil. (See previous post about Coconut Oil for a link to Hexane Solvents). Not to mention the fact that it is also often Hydrogenated. But many people reach for Canola because is lacks taste (doesn't disrupt the flavor of food while cooking) and is low in saturated fat. I guess it's one of those "pick your battle" kind of thing. But if you can afford to try it, Virgin Coconut Oil is a great (and healthy) alternative to most cooking oils!
